Changing Tastes worked alongside Wilderness Market and Conservation International to help identify ways or strategies to increase the market recognition for the fresh yellowfin tuna caught by Grenada’s small fishermen. Changing Tastes looked at ways to highlight the unique flavors, or terroir of fresh tuna, pulled from the waters around Grenada and also develop unique added value products build upon the Caribbean culinary traditions of fresh seafood. The World Bank and United Nations chose to support this work in part because the fish industry is proven to be one of the most resilient to the impact of climate change and increasingly frequent storms in the Caribbean.
