Mushroom Council

As the Mushroom Council considered how to make a positive contribution to environmental sustainability, it turned to Changing Tastes. We conducted a seminal analysis of the environmental, economic, and health benefits of using chopped mushrooms to replace a portion of the beef or pork burgers, sausages, and other foods containing ground meat. Our work provided the case for the now popular blended burger strategy, which has been widely adopted by the foodservice industry and America’s leading chefs including Sodexo, Sonic Drive-in and the James Beard Foundation.
